Smoked trout and potato fritters

Get the kids involved in making delicious trout and potato fritters for a fun and tasty meal!
Ingredients:
  • 2 large (about 400g) Desiree potatoes, peeled, cut in 1cm cubes
  • 150g smoked ocean trout, flaked
  • 1/2 red onion, finely chopped
  • 40.00 ml chopped fresh dill
  • 225g (1 1/2 cups) self-raising flour
  • 250ml (1 cup) milk
  • Salt & freshly ground black pepper, to serve
  • 27.30 gm olive oil
Instructions:
  • Boil the potato in salted water for 10 minutes or until tender. Drain and let it sit for 10 minutes to cool down.
  • In a large bowl, sift flour and create a well in the center. In a jug, whisk together milk and eggs. Gradually stir the milk mixture into the flour using a balloon whisk. Season with salt and pepper, then add potato, trout, onion, and dill to the batter. Stir until just combined.
  • In a frying pan over medium-high heat, heat 2 teaspoons of oil. Spoon 2 tablespoons of batter into the pan, spacing about 5cm apart to make 4 fritters. Cook for 3 minutes until golden underneath and bubbles form on the surface. Flip and cook for another 3 minutes until cooked through. Transfer to a warm plate, cover with foil, and keep warm. Repeat with the remaining oil and batter in 2 more batches to make a total of 12 fritters.
