Smoked trout, bean and potato salad

Elevate your salad game with this mouthwatering smoked trout, bean, and rocket mix.
Ingredients:
  • 400g baby chat potatoes, halved or quartered
  • 100g smoked trout portion
  • 2 bunches rocket, trimmed, washed
  • 420g can cannellini beans, drained, rinsed
  • 62.50 ml slivered almonds, toasted
  • 4 eschalots, peeled, thinly sliced
  • 40.00 ml baby capers
  • 6.93 gm lemon juice
  • 20.00 ml chives, chopped
Instructions:
  • Place potatoes in a saucepan of water and bring to a boil. Simmer until tender, about 10-15 minutes. Drain well and keep warm.
  • In a large bowl, gently flake the trout. Mix in rocket, beans, almonds, eschalots, and capers.
  • Prepare the dressing by whisking together the juice, oil, chives, and garlic in a jug.
  • Just before serving, generously drizzle the dressing over the salad and mix it in thoroughly.
