Smoky Bacon Corn Stew

Hearty, creamy stew featuring smoky bacon, corn, and potatoes - ideal for a Father's Day main course.
Ingredients:
  • 2 cups diced thick-cut applewood-smoked bacon
  • 1 medium onion, chopped
  • 3 large white potatoes, scrubbed and chopped into 1/2-inch cubes
  • 2 (15 ounce) cans cream-style corn
  • 1 (11 ounce) can sweet corn, drained
  • 2 cups water
  • 2 cups half-and-half
  • 1 teaspoon chopped fresh parsley, or to taste
Instructions:
  • In a large, deep skillet over medium-high heat, sizzle bacon until crispy, about 5 minutes. Add onion and cook until both are golden brown, stirring occasionally, for about 5 more minutes. Remove excess bacon grease, leaving 2 to 3 tablespoons in the skillet.
  • Combine potatoes with the aromatic bacon and onion blend. Simmer covered on low heat, stirring occasionally, until potatoes are golden and delicious, about 5 to 7 minutes.
  • Pour the mixture into a medium pot and stir in cream-style corn, sweet corn, and water. Bring to a boil, then simmer on low heat, stirring occasionally, until the potatoes are tender when pierced with a knife, approximately 15 minutes. Season with salt and pepper to taste.
  • Gently heat half-and-half in a small pan until bubbles form. Mix into stew until you reach your desired consistency. Top with fresh parsley before serving.
