Smoky maple chicken burgers recipe

Maple syrup-marinated chicken burgers - a dreamy delight.
Ingredients:
  • 2 corn cobs, husks and silk removed, halved
  • Olive oil spray
  • 200g streaky bacon, halved
  • 1/4 small red cabbage, finely shredded
  • 1 carrot, grated
  • 3 green onions, thinly sliced
  • 61.88 gm whole-egg mayonnaise
  • 10.60 gm lemon juice
  • 100g salted butter, softened
  • 27.00 gm maple syrup
  • 1 gem lettuce, leaves separated
  • 4 brioche rolls, split
  • Smoky barbecue sauce, to serve
  • Oven baked sweet potato chips, to serve
  • 2 chicken breast fillets, halved diagonally
  • 84.38 gm maple syrup
  • 3.75 gm mild paprika
  • 3 garlic cloves, crushed
Instructions:
  • Prepare the Smoky Maple Marinade by sandwiching each chicken piece between plastic wrap and gently pounding with a meat mallet. In a freezable airtight container, combine maple syrup, paprika, and garlic. Add the chicken and toss well to coat. Seal with a lid and refrigerate for 1 hour, or refer to note for timing flexibility.
  • Preheat a barbecue grill over medium-high heat. Drizzle corn with oil and season with salt and pepper. Grill, turning occasionally, for 10 minutes until tender and charred. Set aside on a plate and cover to keep warm. Place bacon on the grill and cook for 4 minutes on each side until golden. Transfer to a plate and cover to keep warm. Lower the heat to medium and grill chicken for 5 minutes on each side until fully cooked. Transfer to a plate.
  • In a bowl, mix together cabbage, carrot, and onion. Stir in mayonnaise, lemon juice, and season with spices. Toss everything together until well combined.
  • In a bowl, combine butter and maple syrup, season with pepper, and mash together. Divide lettuce among roll bases and top with slaw, bacon, and chicken. Drizzle with barbecue sauce. Sandwich with roll tops. Serve with a dollop of butter on the corn, along with chips.
