Delicious potato salad with red-skinned potatoes, red onions, and crispy bacon - ideal for entertaining or outdoor gatherings.
Ingredients:
  • 2 pounds red potatoes
  • 0.5 pound bacon
  • 1 cup mayonnaise
  • 0.25 cup freshly grated Parmesan cheese
  • 1 tablespoon ground paprika
  • 1 tablespoon ground mustard powder
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon seasoned salt (such as Jane's Krazy Mixed-Up Salt®)
  • 0.5 cup chopped red onion
Instructions:
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Lower the heat to medium-low and gently simmer until tender for approximately 20 minutes. Drain the potatoes and cut them into bite-sized pieces.
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Drain the bacon on paper towels, chop when cooled, and then transfer 3 tablespoons of bacon drippings to a large bowl.
  • Combine mayonnaise, Parmesan cheese, paprika, mustard powder, parsley, chives, Worcestershire sauce, garlic, and seasoned salt with the bacon drippings, whisk until smooth. Add red onion and chopped bacon, then gently fold in cooked potatoes. Serve at room temperature.
