Chef John's German potato salad features smoky bacon dressing with sweet onions, tangy vinegar, and grilled potatoes.
Ingredients:
  • 2.5 pounds Yukon Gold potatoes
  • 0.5 pound bacon, sliced
  • 1 cup diced yellow onion
  • 2 tablespoons white sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 0.5 cup white wine vinegar
  • 0.25 cup freshly chopped Italian parsley
Instructions:
  • Preheat the grill to 375 degrees F (190 degrees C) and add the potatoes. Grill, flipping occasionally, until the potatoes are just tender when poked with a skewer, approximately 15 minutes. Allow them to cool before handling.
  • Fry bacon in a skillet over medium heat until the grease turns foamy, approximately 5 minutes. Set aside half the bacon for later. Now, add onion to the remaining bacon in the pan and sauté until translucent, about 5 minutes.
  • Peel and slice potatoes into quarters, then 1/2-inch thick slices. Transfer to a bowl.
  • Mix sugar, salt, black pepper, cayenne, and vinegar with the bacon. Turn up the heat to medium-high and let it come to a boil. Stir well and then take the dressing off the heat.
  • Drizzle the dressing over the potatoes and mix well. Allow it to sit for 5 minutes, then mix again and sprinkle with parsley. Finish by topping with the crispy bacon. Enjoy while warm.
