Grilled Patty Melts with Smothered Onions

Create a mouthwatering Swiss and onion rye burger by grilling rye bread, layering Swiss cheese, and topping it with generous onions.
Ingredients:
  • 1 lb lean (at least 80%) ground beef or ground turkey
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon dried oregano leaves
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 8 slices rye bread
  • 4 slices (3/4 oz each) Swiss cheese
  • 1 teaspoon vegetable oil
  • 2 medium onions, thinly sliced, separated into rings
  • 1/8 teaspoon salt
  • Dash pepper
Instructions:
  • Preheat a gas or charcoal grill. Combine all patty melt ingredients, excluding bread and cheese, in a medium bowl. Form the mixture into 4 patties, each about 3/4 inch thick. Chill in the refrigerator while you cook the onions.
  • In a preheated 8-inch skillet, heat oil over medium-high heat until shimmering. Cook onions, stirring frequently, until tender. Season with salt and pepper, then keep warm.
  • Grill patties over medium heat with the lid closed for 12 to 15 minutes, flipping once, until the meat thermometer reads 160°F. Toast bread slices on the grill for the last 5 minutes, flipping once until golden brown. Add cheese on top of the patties and cover the grill for about 1 minute until melted. Serve patties on toasted bread slices and garnish with onions.
