Grilled green salad

Grilled veggie salad with smoky charred flavors, perfect companion for BBQ meats and fish.
Ingredients:
  • 2 small zucchini, thickly sliced diagonally
  • 2 bunches asparagus, trimmed, halved diagonally
  • 36.40 gm extra virgin olive oil
  • 200g baby green beans, trimmed
  • 40.00 ml red wine vinegar
  • 11.80 gm wholegrain mustard
  • 150g baby spinach
Instructions:
  • Combine zucchini, asparagus, and half of the oil in a bowl, then season with salt and pepper.
  • Preheat a barbecue chargrill on medium-high heat and grill the zucchini and asparagus, turning occasionally, for 3 to 5 minutes until tender and lightly charred.
  • Simmer beans in boiling water for 2 to 3 minutes until vibrant and tender. Drain, then rinse under cold water and drain well.
  • Combine vinegar, mustard, and the remaining oil in a small bowl. Transfer spinach, zucchini, asparagus, and beans to a large serving bowl. Drizzle dressing over the vegetables and mix gently. Serve.
