Try this flavorful grilled potato and green bean salad as a perfect side dish for any meal.
Ingredients:
  • 1 1/2 cups frozen cut green beans
  • 1 (1 lb. 4-oz.) pkg. refrigerated new potato wedges
  • 1/2 cup purchased French vinaigrette or oil and vinegar salad dressing
  • 1/2 cup red onion slivers
  • 1 teaspoon chopped fresh parsley
Instructions:
  • Preheat the grill. Place green beans in a medium microwave-safe bowl with 1 tablespoon of water. Microwave on HIGH for 4 to 6 minutes until they are crisp-tender, then drain and set aside.
  • In a large bowl, combine the potatoes with 1 tablespoon of salad dressing, ensuring they are well coated. Transfer the dressed potatoes to a grill basket.
  • Preheat grill to medium heat. Place grill basket 4 to 6 inches from the heat source. Grill for 15 to 20 minutes, stirring occasionally, until potatoes are tender. Add onions during the last 5 minutes of cooking.
  • Mix together the cooked green beans, potatoes, onion, and remaining salad dressing in a large bowl until well combined. Sprinkle with parsley. Enjoy immediately, or refrigerate for 1 hour to chill before serving.
