Grilled foil packet of potato slices, green peppers, onions, butter, and Cheddar cheese.
Ingredients:
  • 6 potatoes, thinly sliced
  • 1 small onion, chopped
  • 0.25 cup chopped green bell pepper
  • 0.25 cup butter or margarine
  • 1 cup shredded Cheddar cheese
Instructions:
  • Heat up the grill until it reaches medium-high temperature.
  • Prepare a large piece of aluminum foil by spraying one side with cooking spray. Arrange potatoes, onion, and green bell pepper in the center of the foil, season with salt and pepper, and top with small pieces of butter or margarine.
  • Wrap the foil securely around the vegetables to create a tight packet, ensuring double wrapping for added protection against burning.
  • Grill the packet on the preheated grill for 20 minutes, then flip and grill for an additional 10 minutes.
  • Gently open the packet and test for tenderness with a fork. Once tender, generously sprinkle cheese over the vegetables and let it melt. Transfer to a platter and serve alongside your main dish.
