Easy homemade pierogi using wonton wrappers filled with cheesy potatoes, topped with savory bacon and onion sauce. Perfect for a satisfying meal or snack.
Ingredients:
  • 2 teaspoons butter
  • 4 slices bacon, chopped
  • 2 tablespoons bacon drippings
  • 0.5 yellow onion, diced
  • 5 medium Yukon Gold potatoes, peeled and halved
  • salt and ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1 large egg
  • 1.5 cups farmer’s cheese, or any cheese blend
  • 1 tablespoon water
  • 50 wonton wrappers, or as needed
  • 1 cup sour cream
  • 0.25 cup chopped fresh chives
Instructions:
  • In a spacious skillet over medium heat, melt butter. Add chopped bacon and onions, sauté until the bacon is crisp and onions are golden brown, about 6 to 8 minutes. Transfer bacon and onions to a small dish, saving around 2 tablespoons of bacon fat for frying the pierogi.
  • 1. In a large pot, cook potatoes in salted water until tender. Drain and mash until smooth. Let cool for 10 minutes. 2. Season with salt, black pepper, and cayenne pepper, then mix in 1 egg and farmer's cheese. 3. Chill in the refrigerator for about 30 minutes before serving.
  • Whisk together 1 egg and 1 tablespoon of water in a bowl to make the egg wash.
  • Working on a floured surface, set down 2 to 3 wonton wrappers. Lightly brush the edges with egg wash. Spoon 2 tablespoons of filling in the center of each wrapper. Fold in half and seal the edges securely.
  • 1. Boil salted water, then cook pierogi until they float, for 2 to 3 minutes. Drain.
  • Cook pierogi in batches in reserved bacon drippings in a skillet over medium heat until golden brown, about 2 minutes per side. Toss with bacon and onions, then serve garnished with sour cream and chives.
