Easy Sour Cream Scalloped Potatoes

Creamy Cheddar scalloped potatoes - a quick and easy cheesy casserole.
Ingredients:
  • 12 large potatoes, peeled and halved
  • 2 (10.5 ounce) cans cream of chicken soup
  • 2 cups sour cream
  • 2 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Lower heat and simmer until tender, approximately 15 minutes. Drain the potatoes, then dice and transfer to a large bowl.
  • Mix chicken soup, sour cream, and half of the Cheddar cheese with potatoes until well combined. Season with salt and black pepper. Transfer the potato mixture into a 9x13-inch casserole dish and top with the rest of the Cheddar cheese.
  • Simply bake until cooked through and the Cheddar cheese is melted, for around 30 minutes in the preheated oven.
