Chilli chicken skewers with avocado cream

Easy sweet and sour chicken skewers with lime, honey, and creamy avocado dip - a hit for any party!
Ingredients:
  • 2 (about 400g) single chicken breast fillets
  • 44.00 gm sweet chilli sauce
  • 42.00 gm fresh lime juice
  • 28.60 gm honey
  • 1/2 tsp finely grated lime rind
  • 2 ripe avocados, halved, stones removed, peeled, coarsely chopped
  • 37.60 gm Light Sour Cream
  • 10.60 gm fresh lime juice, extra
Instructions:
  • Slice the chicken into thin strips and transfer to a bowl. Mix in the sweet chili sauce, lime juice, honey, and lime zest until fully incorporated. Chill in the refrigerator for 10 minutes to let the flavors meld. Skewer the marinated chicken strips.
  • Combine avocado, sour cream, and extra lime juice in a food processor. Blend until smooth. Season with salt and pepper to taste.
  • Preheat a barbecue flat plate or chargrill on medium-high heat, then grill skewers for 2-3 minutes on each side until perfectly cooked.
  • Spoon the avocado mixture into a piping bag with a 1cm plain nozzle. Pipe into 10 serving glasses and serve with the chicken skewers for dipping.
