Barbecued lime chicken skewers with green chilli yoghurt

Host a laid-back summer gathering with delicious BBQ chicken skewers and tangy yogurt dipping sauce for your loved ones.
Ingredients:
  • 20.00 ml lime rind, finely grated
  • 86.63 gm lime juice
  • 1 long green chilli, seeded, finely chopped
  • 2 garlic cloves, crushed 2cm piece fresh ginger, peeled, finely grated
  • 65.63 gm soy sauce
  • 56.88 gm light olive oil
  • 40.00 ml fresh coriander leaves, chopped
  • 600g chicken thigh fillets, trimmed, cut into 2cm pieces
  • Fresh mint sprigs, to serve
  • 1 long green chilli, seeded, chopped
  • 62.50 ml fresh coriander leaves
  • 187.50 ml thick Greek-style yoghurt
  • 65.63 gm Thick Mint Sauce
Instructions:
  • Combine lime rind, lime juice, chili, garlic, ginger, soy sauce, oil, and coriander in a glass or ceramic dish. Gently whisk with a fork until mixed. Add chicken and toss until coated. Cover with plastic wrap and refrigerate for 1-2 hours, if possible.
  • Skewer the chicken evenly onto 16 skewers.
  • Heat up your barbecue plate or chargrill on high. Grill the skewers for about 5 minutes on each side until they're beautifully browned and fully cooked.
  • Prepare the Green Chilli Yoghurt by blending green chillies, coriander, and yoghurt until smooth in a food processor. Transfer the mixture to a serving bowl and mix in the mint sauce. Serve the skewers with the Green Chilli Yoghurt and garnish with fresh mint sprigs.
