Delicious chicken skewers with creamy coconut rice and spicy Asian flavors will have you craving more!
Ingredients:
  • 750g chicken breast fillets, chopped
  • 62.50 ml kecap manis
  • 18.20 gm peanut oil
  • 1 tsp sambal oelek
  • 1/2 tsp ground turmeric
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 266.00 gm jasmine rice, rinsed
  • 1 stalk lemongrass, white part only, cut into 3 pieces
  • 400ml can light coconut milk
  • 191.25 gm chicken style liquid stock
  • 200g snow peas, trimmed, halved
  • lime wedges, to serve
Instructions:
  • Skewer the chicken and place them in a dish. Mix kecap manis, oil, sambal oelek, turmeric, cumin, and coriander, and pour over the chicken. Make sure the chicken is well coated. Refrigerate for 30 minutes, if possible.
  • Combine rice, fragrant lemongrass, creamy coconut milk, and flavorful stock in a saucepan over high heat. Bring to a boil, then reduce heat to low, cover, and let simmer for 15 minutes. After cooking, allow it to stand for 5 minutes before serving.
  • Preheat barbecue plate over medium-high heat. Grill skewers for 3 minutes per side or until chicken is perfectly cooked.
  • Place snow peas in a bowl and pour boiling water over them. Let sit for 2 minutes, then drain and rinse with cold water.
  • Plate the rice gracefully, arranging the skewers and snow peas on top. Accompany with fresh lime wedges for a burst of citrus flavor.
