Ingredients:
  • 600g chicken thigh fillets, cut into 3cm pieces
  • 41.60 gm chilli sauce
  • 42.00 gm lemon juice
  • 5.00 gm sweet paprika
  • 2.50 gm ground cumin
  • 1/2 tsp ground oregano
  • Coriander leaves, to serve
  • 2 ripe avocados, stone removed, peeled, finely chopped
  • 1 spring onion, end trimmed, thinly sliced
  • 1 long red chilli, seeded, finely chopped
  • 62.50 ml coarsely chopped coriander
  • 42.00 gm lime juice
  • 150g mayonnaise
  • 20.80 gm tomato sauce
  • 10.40 gm chilli sauce
Instructions:
  • In a large bowl, mix together the chicken, oil, garlic, chili sauce, lemon juice, sugar, paprika, cumin, and oregano. Cover with plastic wrap and refrigerate for 30 minutes to marinate. Skewer the marinated chicken onto metal or soaked bamboo skewers.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill skewers, turning occasionally, until they are cooked through, about 10 minutes.
  • In a small bowl, mix together mayonnaise, tomato sauce, lemon juice, and chilli sauce to create the chilli mayonnaise.
  • Combine ripe avocado, fresh spring onion, spicy chilli, fragrant coriander, and tangy lime juice in a large bowl to create a flavorful avocado salsa.
  • Arrange the skewers on a beautiful platter. Top with flavorful avocado salsa. Present with zesty chili mayonnaise, fresh lime wedges, and fragrant coriander leaves. Serve promptly and enjoy!
