30-minute keto-friendly chicken mince dinner.
Ingredients:
  • 1 medium red onion
  • 500g chicken mince
  • 125.00 ml fresh breadcrumbs
  • 82.50 ml finely chopped fresh coriander leaves
  • 82.50 ml finely chopped fresh flat-leaf parsley leaves
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 56.88 gm extra virgin olive oil
  • 2 avocados, halved
  • 1 long green chilli, thinly sliced, plus extra to serve (optional)
  • 65.63 gm lemon juice
  • 4 tomatoes, cut into wedges
  • Extra 125.00 ml fresh flat-leaf parsley leaves
Instructions:
  • Thinly slice half of the onion, then finely chop the remaining half. Combine the minced meat, breadcrumbs, egg, fresh coriander, chopped parsley, cumin, ground coriander, oregano, and finely chopped onion in a bowl. Season with salt and pepper, mix thoroughly. Shape the mixture into 8 sausages, each about 12cm long, around metal or bamboo skewers.
  • Heat 1 tablespoon of oil in a hot chargrill pan or barbecue grill. Grill skewers, turning occasionally, until beautifully golden and fully cooked, about 10 minutes.
  • Scoop avocado flesh into a food processor along with chili, the remaining 1 tablespoon of oil, and 2 tablespoons of lemon juice. Blend until creamy, then season with salt and pepper.
  • Combine tomato, sliced onion, parsley leaves, remaining oil, and lemon juice in a bowl. Season with salt and pepper, then toss together. Serve skewers with avocado and tomato salad, garnished with extra chili, if desired.
