Spice up your meal with flavorful kofta served with naan bread and rice.
Ingredients:
  • 750g chicken mince
  • 1 onion, coarsely grated
  • 1 egg, lightly beaten
  • 70g breadcrumbs
  • 1 long green chilli, seeds removed, finely chopped
  • 1 tsp garam masala
  • 40.00 ml chopped coriander leaves, plus extra to garnish
  • 20.00 ml freshly grated ginger
  • 18.20 gm olive oil
  • 84.00 gm korma curry paste
  • 400g can chopped tomatoes
  • 200ml canned coconut milk
  • 200ml chicken style liquid stock
  • 8.00 gm brown sugar
  • 21.00 gm lemon juice
  • Naan bread, to serve
  • Salt, to season
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with baking paper.
  • Combine chicken mince, onion, egg, breadcrumbs, chilli, garam masala, coriander, half of the ginger, and 1 teaspoon of salt in a bowl. Mix thoroughly by hand. Shape the mixture into 30 walnut-sized balls using damp hands. Arrange them in a single layer on a baking tray. Bake for 15 minutes until lightly golden.
  • Warm oil in a deep frypan over medium heat. Mix in curry paste and the rest of the ginger. Sauté for 1 minute until fragrant. Toss in tomatoes and cook for 2 minutes. Pour in coconut milk, stock, and sugar. Bring to a boil, then lower heat and simmer for 5 minutes. Gently add kofta and simmer for 20 minutes until cooked and sauce thickens. Finish by stirring in lemon juice to your liking.
  • Plate the kofta alongside flavorful pilau rice, topped with fresh coriander and a side of warm naan bread.
