Aromatic Middle Eastern-inspired lamb koftas sizzling on the grill transport you to the bustling streets of the region.
Ingredients:
  • 1 brown onion, grated
  • 62.50 ml panko breadcrumbs
  • 1.25 gm ground cinnamon
  • 2 garlic cloves, crushed
  • 40.00 ml fresh coriander, finely chopped, plus extra leaves, to serve
  • 420g can lentils, drained, rinsed
  • 200.00 gm basmati rice
  • 382.50 gm salt reduced chicken style liquid stock
  • 36.40 gm extra virgin olive oil
  • 125.00 ml plain Greek-style yoghurt
  • 3 tomatoes, cut into wedges
  • 2 tsp ground coriander
  • 5.00 gm paprika
  • 1/2 tsp cayenne pepper
  • 4.80 gm salt
  • 1/2 tsp ground black pepper
Instructions:
  • Create the Spice Mix: Combine all ingredients in a bowl and mix well.
  • Combine mince, onion, breadcrumbs, cinnamon, garlic, coriander, and 1 1/2 tablespoons of the Spice Mix in a bowl. Mix thoroughly using your hands and shape into 16 koftas.
  • In a large saucepan over medium-high heat, combine lentils, rice, stock, and the remaining Spice Mix. Cover the saucepan and bring it to a simmer. Reduce the heat to low and cook for about 12 minutes, or until the rice is tender and the liquid is absorbed. Remove the saucepan from the heat.
  • Heat oil in a large frying pan over medium-high heat. Add the koftas and cook for 10 minutes, shaking the pan occasionally until they are golden brown and cooked through.
  • Arrange the koftas over the rice, then generously drizzle with yoghurt and sprinkle with additional coriander leaves. Serve alongside tomato wedges.
