Chicken kofta with spiced burghul pilaf

Elevate dinner with flavorful chicken koftas served with fragrant burghul pilaf.
Ingredients:
  • 200g medium burghul or coarse burghul (cracked wheat) (see note)
  • 40.00 ml currants
  • 1 lemon, juiced
  • 50g butter
  • 36.40 gm olive oil
  • 1 red onion, finely chopped
  • 3/4 tsp ground allspice
  • 1.88 gm ground cinnamon
  • 70g (2/3 cup) roughly chopped walnuts, lightly roasted
  • 40.00 ml fresh flat-leaf parsley, chopped
  • 40.00 ml fresh mint leaves, chopped
  • 1 long green chilli, seeded, finely chopped
  • Tamar Valley Greek Style Yoghurt, to serve
  • Turkish bread, to serve
  • 1 onion, quartered
  • 160g bread
  • 2 cloves garlic, crushed
  • 2.50 gm ground cumin
  • 1 tsp dried mint
  • 750g chicken mince
  • Olive oil, to brush
Instructions:
  • For pilaf, start by placing burghul in a bowl and covering it with boiling water up to 2cm. Let it sit for 15 minutes until most of the liquid is absorbed. Drain and spread it on a tray to cool. Mix currants with lemon juice in a cup.
  • To prepare the kofta mixture, blend onion to a paste in a food processor. Add bread, garlic, cumin, mint, 1 teaspoon salt, and 1/2 teaspoon pepper; process until well mixed. Incorporate chicken and process until fully combined. Form the mixture into 12 portions, shaping each around a skewer into 10cm sausage shapes. Brush with oil before cooking.
  • Preheat a chargrill or barbecue over medium heat. Cook the kofta in 2 batches, turning to cook on all 4 sides, until they are cooked through, about 8 minutes.
  • In a frying pan over medium heat, melt butter with oil. Sauté onion until soft, about 8 minutes. Stir in spices and cook until fragrant, about 1 minute. Add burghul and cook until warmed through, about 8 minutes, tossing occasionally.
  • Fold in the currant mixture, walnuts, herbs, and chili into the bulgur mixture.
  • Portion out the pilaf and kofta onto plates. Accompany with a side of yogurt and Turkish bread.
