Spiced chicken skewers with refreshing mint raita dip.
Ingredients:
  • 200g (3/4 cup) Greek-style natural yoghurt
  • 3 tsp garam masala
  • 1 1/2 tsp ground turmeric
  • 1/4-1/2 tsp chilli powder
  • 1.2kg chicken breast fillets, cut into 3cm pieces
  • Peanut oil, to grease
  • Tomato & Onion Salad with Tamarind (see related recipe), to serve
  • Lime wedges (optional), to serve
  • 250.00 ml firmly packed fresh mint leaves
  • 2 garlic cloves, crushed
  • 1 long fresh green chilli, deseeded, finely chopped
  • 130g (1/2 cup) Greek-style natural yoghurt
Instructions:
  • For a flavorful mint raita, blend mint, garlic, chili, cumin, and 1 tablespoon of yogurt in a food processor until smooth. Then, add the rest of the yogurt and pulse until mixed. Transfer to a serving bowl, season with salt and pepper to taste.
  • In a glass or ceramic bowl, mix together the yogurt, ginger, garam masala, turmeric, and chili. Season with salt and pepper to taste. Add the chicken and stir to coat evenly. Cover with plastic wrap and refrigerate for 1 hour to marinate.
  • Cover a baking tray with foil and brush with oil to prevent sticking. Skewer the chicken pieces and place them on the greased tray.
  • Preheat the grill to medium-high heat. Grill the skewers, turning occasionally, until they are golden and cooked through, about 10 minutes.
  • Arrange the skewers and salad on serving plates. Drizzle with the mint raita and serve with lime wedges on the side, if preferred.
