Simple grilled potato salad with crispy bacon, fresh green onion, and vibrant parsley - perfect for summer.
Ingredients:
  • 2 pounds red potatoes
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 clove garlic, chopped
  • 0.5 teaspoon white sugar
  • 6 slices cooked bacon, chopped
  • 4 green onions, chopped
  • 2 tablespoons minced fresh parsley
Instructions:
  • Prepare the grill by preheating it to medium heat and giving the grate a light coating of oil.
  • In a bowl, generously coat potatoes with 2 tablespoons of olive oil by tossing them together.
  • Grill the potatoes until tender for around 30 minutes. Let them cool for 10 to 15 minutes, then cut them into quarters.
  • In a bowl, combine 1/2 cup of olive oil, vinegar, salt, black pepper, garlic, and sugar, whisking until the dressing is smooth. Toss potatoes, bacon, green onions, and parsley in the dressing until everything is evenly coated.
