Warm grilled potato salad with olives and parmesan

Elevate your Christmas feast with this irresistible potato salad that will leave your guests coming back for more.
Ingredients:
  • 1kg small chat potatoes
  • 100ml extra virgin olive oil
  • 5 spring onions, thinly sliced on an angle
  • 2 garlic cloves, finely chopped
  • 40.00 ml chopped flat-leaf parsley leaves
  • 2 tsp chopped fresh oregano
  • 75g olive
  • 80g parmesan
Instructions:
  • Preheat the oven to 190°C (375°F) for the perfect cooking temperature.
  • Arrange the potatoes in a baking dish.
  • Drizzle 1 tablespoon of oil, season, cover with foil, and bake for 50-60 minutes until tender. Let it cool slightly before serving.
  • In a small bowl, mix together 2 tablespoons of oil, spring onion, garlic, parsley, oregano, and olives. Season with salt and pepper to taste, then set aside.
  • Heat up your barbecue or chargrill pan on high. Halve the potatoes, drizzle with 2 tablespoons of oil, season, and grill for 5 minutes on each side until they are warmed through and have a nice char. Flip occasionally.
  • Transfer the potatoes to a large serving bowl, drizzle the dressing on top, and toss generously to ensure the potatoes are well coated. Sprinkle with Parmesan cheese and serve the dish while still warm.
