Delicious and speedy chicken and potato salad recipe.
Ingredients:
  • 4 chicken breast fillets, trimmed
  • salt and pepper to taste
  • 2 tsp salted baby capers, rinsed
  • 17.70 gm Dijon mustard
  • 123.75 gm mayonnaise
  • 750g chat potatoes, halved
  • 40.00 ml roughly chopped dill
Instructions:
  • Steam the potatoes until tender, then combine them in a bowl with dill, mustard, mayonnaise, capers, salt, and pepper. Toss to coat evenly, cover, and set aside.
  • Preheat a grill plate or non-stick frying pan over medium heat. Brush the chicken with oil and season with salt and pepper. Grill for 4-5 minutes on each side, or until fully cooked.
  • Present the chicken alongside a side of potato salad and steamed greens.
