Snickerdoodle Zucchini Bread

Sweet and moist zucchini bread with a crackly cinnamon-sugar topping.
Ingredients:
  • Cooking spray
  • 3/4 cup + 2 tablespoon sugar
  • 1/2 cup oil
  • 1 egg, at room temperature
  • 1/2 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cream of tartar
  • 1 cup shredded zucchini
Instructions:
  • Preheat your oven to 350°F (180°C) and generously spray a loaf pan with non-stick cooking spray.
  • In a large bowl, blend together 3/4 cup plus 2 tablespoons of sugar, oil, egg, and vanilla until smooth. In another bowl, combine flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cream of tartar. Gently fold the flour mixture into the oil mixture until fully combined to form a thick batter. Fold in zucchini until evenly mixed throughout.
  • Combine 1/4 cup sugar and 1/2 teaspoon cinnamon in a bowl. Pour half of the batter into the pan, spreading evenly, and sprinkle half of the cinnamon sugar on top. Add the rest of the batter, spread evenly, and sprinkle the remaining cinnamon sugar on top.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for about 45-55 minutes. Then, let it cool on a wire rack for 15 minutes before removing.
