Quick and delicious fish tacos for a Mexican fiesta in just 25 minutes.
Ingredients:
  • 2.50 gm smoked paprika
  • 2.50 gm ground cumin
  • 20.00 ml finely chopped fresh coriander
  • Sea salt, to season
  • 600g fresh barramundi fillets
  • 163.35 gm whole egg mayonnaise
  • 2-60.00 ml, chopped hot sliced jalapeno chillies
  • 8 small flour tortilla wraps
  • 2 avocados, thinly sliced
  • 1/2 bunch watercress, trimmed
  • 2 fresh limes, halved
Instructions:
  • In a large bowl, mix together paprika, cumin, coriander, oil, and sea salt. Add fish and coat well in the oil mixture. Heat a large non-stick pan over medium heat, then cook fish until browned on both sides and cooked through. Use a fork to break fish into large chunks. In a small bowl, combine mayonnaise and chillies.
  • Warm tortillas based on package instructions. Smear jalapeno mayo on each, layer with fish, avocado, and watercress. Drizzle generously with lime juice, then roll up tightly. Serve promptly.
