Sole fillets cooked in a flavorful herb and tomato wine sauce.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup leeks, chopped
  • 0.5 teaspoon minced garlic
  • 0.5 cup dry white wine
  • 3 tomatoes, chopped
  • 1 cup chicken broth
  • 0.5 teaspoon dried thyme
  • 1 teaspoon dried dill weed
  • 2 (6 ounce) fillets sole
Instructions:
  • In a skillet with a lid, warm the olive oil over medium heat. Sauté leeks and garlic for 3 minutes until leeks start to soften. Add white wine, bring to a simmer, then mix in tomatoes, chicken broth, thyme, and dill weed. Simmer uncovered until liquid reduces by half.
  • Place the sole filets on top of the vegetables in the skillet, cover, and cook for about 10 minutes until the fish is opaque and flakes easily with a fork. Serve by ladling the sauce over the sole.
