Sole with Almonds

Zesty citrus nut-crusted fish ready in 25 minutes for a delightful dinner!
Ingredients:
  • Vegetable oil for greasing pan
  • 1 pound sole or other lean fish fillets, about 3/4 inch thick
  • 1/3 cup sliced almonds or chopped walnuts
  • 3 tablespoons margarine or butter at room temperature
  • 1 1/2 tablespoons grated lemon peel
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon paprika
Instructions:
  • Preheat your oven to 375°F and generously grease the bottom of a 9-inch square pan with oil.
  • If necessary, divide the fish fillets into 4 serving pieces. Arrange them in the greased pan with the skin sides facing down.
  • Combine the almonds, margarine, lemon zest, lemon juice, salt, and paprika, then generously spoon over the fish.
  • Bake the fish without a cover for 15 to 20 minutes, or until it easily flakes with a fork.
