Simple and budget-friendly seafood dish with faux crab and diced veggies.
Ingredients:
  • 6 ounces imitation crabmeat, flaked
  • 0.33333334326744 cup diced red bell pepper
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup shredded mozzarella cheese
  • 2 tablespoons creamy salad dressing (such as Miracle Whip®)
  • 1 tablespoon dried minced onion
  • 0.75 teaspoon dried parsley
  • 1 pinch cayenne pepper
  • salt and ground black pepper to taste
  • 4 (4 ounce) sole fillets
  • 0.25 cup bread crumbs
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • In a mixing bowl, combine imitation crabmeat, bell pepper, celery, and mozzarella cheese. Stir in creamy salad dressing, dried onion, parsley, and cayenne pepper. Season with salt and pepper. Lay a sole fillet on a work surface, add a quarter of the crab mixture to one end, then roll it up and secure with a toothpick. Repeat with remaining fillets and place them in a baking dish side by side. Cover with foil before baking.
  • Place the dish in the upper third of the preheated oven for 15 minutes. Remove the foil, sprinkle with breadcrumbs, and bake until the fish is flaky and the filling is hot, for an additional 10 to 15 minutes.
