Try a mouthwatering twist on classic crab imperial by stuffing it into flaky rockfish fillets, or swap in sole or flounder for a delectable alternative when Pacific rockfish is not available.
Ingredients:
  • 2 slices day-old white bread, cubed
  • 2 tablespoons fresh parsley, finely chopped
  • 0.5 teaspoon seafood seasoning, such as Old Bay™
  • 0.5 teaspoon dried mustard
  • 2 teaspoons fresh lemon juice
  • 2 dashes liquid hot pepper sauce, such as Tabasco™
  • 2 tablespoons butter, softened
  • 0.5 cup mayonnaise
  • 1 pound fresh lump crabmeat
  • 4 (6 ounce) fillets rockfish
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and lightly grease an 8x8 baking dish.
  • Combine the bread cubes, parsley, seafood seasoning, mustard, pepper, lemon juice, pepper sauce, butter, and mayonnaise in a mixing bowl. Carefully fold in the crabmeat, ensuring the chunks remain intact.
  • Lay the fish fillets flat, spread 1/4 of the crab mixture on one side, roll up the fillet with the crab filling inside, and transfer it to the dish with the open side facing down.
  • Bake until golden and bubbling, and fish easily flakes with a fork, for approximately 15 minutes.
