Quick and easy Mediterranean-inspired spaghetti dish for one featuring tomatoes, olive oil, and canned sardines.
Ingredients:
  • 2 ounces dry spaghetti or capellini
  • 0.5 onion, chopped
  • 1 (4 ounce) can rolled sardines with capers
  • 1 fresh tomato, chopped
  • 2 teaspoons crushed red pepper flakes
  • 0.33333334326744 cup Italian bread crumbs
  • grated Parmesan cheese to taste, for serving
Instructions:
  • In a large pot, boil lightly salted water. Cook spaghetti until al dente for 8 to 10 minutes. Drain, rinse with cold water, and toss with a drizzle of olive oil. Keep warm covered.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté the onion until soft and translucent, about 5 minutes. Add the sardines and cook for 5 to 8 minutes until they begin to break apart. Mix in the tomatoes and heat through. Fold in the bread crumbs. Serve the mixture over spaghetti and sprinkle with your preferred amount of grated Parmesan cheese.
