Sophia's Homemade Seafood Stock

Delicious homemade seafood stock for flavorful soups, paella, and more!
Ingredients:
  • 2 large onions, coarsely chopped
  • 1 bunch celery, coarsely chopped
  • 4 large carrots, coarsely chopped
  • 2 large green bell peppers, coarsely chopped
  • 1 bunch fresh cilantro
  • 0.5 bunch fresh oregano
  • 2 bay leaves
  • 3.5 (1 liter) bottles water
  • 0.5 pound fish parts (such as bones, spine, and tail)
  • 2 large fish heads
  • 2 cups clam juice
  • 1 teaspoon whole black peppercorns
Instructions:
  • In a large stockpot, heat olive oil over medium-high heat. Cook and stir onions for 5 minutes. Add celery, carrots, and bell peppers and saute for another 5 minutes. Stir in cilantro, oregano, and bay leaves, saute for 2 more minutes. Add water, fish parts, fish heads, clam juice, and peppercorns.
  • Bring the mixture to a boil, then simmer uncovered on low heat for a minimum of 4 hours. Allow it to cool for approximately 30 minutes after turning off the heat.
  • Skim off any bulk items from the stock using a skimmer or slotted spoon. Strain the stock through a fine-mesh strainer into a large container, ensuring no fish bones remain. Use immediately or freeze for later use.
