Authentic Polish kolacky recipe passed down from generations, a Christmas family favorite.
Ingredients:
  • 6 ounces cream cheese, softened
  • 1 cup butter
  • 2 tablespoons white sugar
  • 0.125 teaspoon salt
  • 2 teaspoons baking powder
  • 1 (21 ounce) can apple pie filling
  • 2 tablespoons confectioners' sugar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give your cookie sheets a light grease.
  • Blend butter with cream cheese using a pastry blender or food processor.
  • Combine all dry ingredients in a small bowl, excluding the confectioners' sugar, and sift them together.
  • Incorporate dry ingredients into the butter/cream cheese mixture until a consistent, crumbly texture forms.
  • Form a firm dough by kneading. If the dough becomes too soft, chill for about five minutes before proceeding.
  • Flatten dough to a delicate 1/4-inch thickness.
  • Cut the dough using a cookie cutter or glass into 3-inch diameter cookies. Roll out any remaining dough. Press your thumb into each cookie to make a depression and fill each with 1/2 teaspoon of filling.
  • Bake until lightly golden, approximately 20 minutes. Allow to cool on a wire rack, then dust with confectioners' sugar. Store in an airtight container.
