Indulgent chocolate sour cream cake with cocoa, coffee, and a luscious frosting. decadent simplicity!
Ingredients:
  • 2 cups all purpose flour (250g)
  • 1 3/4 cups granulated sugar (360g)
  • 3/4 cup dark cocoa powder (70g)
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1 cup sour cream
  • 3/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 cup strong piping hot coffee
  • 1 batch chocolate or cream cheese frosting
Instructions:
  • Preheat your oven to 300°F. Grease and flour a 9 x 13-inch cake pan, then set it aside.
  • Combine the flour, sugar, cocoa powder, and baking soda in a large bowl and whisk in the kosher salt.
  • Combine eggs, sour cream, canola oil, and vanilla extract in a medium bowl. Whisk until smooth and creamy.
  • Mix the wet ingredients into the dry ingredients using a stiff spatula until the batter is thick like frosting.
  • Incorporate the piping hot coffee into the batter until it resembles a smooth cake batter.
  • Transform the cake: Pour the batter into the prepared pan, then bake in the oven for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cake: Remove the cake from the oven and place it on a baking rack to cool. After 30 minutes, spread the frosting on top and serve directly from the pan. Enjoy a nostalgic treat straight out of the '80s!
