Sous Vide Chicken Breast with Lemon and Herbs

Experience the juiciest and most tender chicken by cooking sous vide with your favorite seasonings.
Ingredients:
  • 2 (10 ounce) split chicken breasts, bone-in and skin-on
  • salt and freshly cracked black pepper to taste
  • 2 cloves garlic, sliced
  • 6 sprigs thyme
  • 2 slices lemon
Instructions:
  • In a large pot, fill it with water and insert a sous vide cooker. Adjust temperature to 148 degrees F as per the manufacturer's instructions.
  • Season the chicken breast generously with salt and pepper on both sides. Top with garlic slices, thyme, and lemon on the skin. Place the chicken in 1 large or 2 small vacuum bags and seal with a vacuum sealer.
  • Submerge the bags in water and set a timer for 2 hours. Once the timer goes off, take the chicken out of the bag. Discard garlic, thyme, and lemon slices, then gently pat the chicken dry with paper towels.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken skin-side down until nicely browned, about 1 minute. Use tongs to ensure even browning on all edges. Remove from heat and rest for 2-3 minutes. Remove bones, slice, and serve hot.
