Southern-style beef stew made with arm shoulder roast in place of tough stew meat. For a twist, try using turtle meat for a flavorful Turtle Stew. Customize ingredients to taste and serve with buttered bread for a comforting meal.
Ingredients:
  • 1 tablespoon butter
  • 1.5 pounds beef stew meat, cut into 1/2 inch pieces
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 3 (14.5 ounce) cans stewed, diced tomatoes
  • 1 (10 ounce) package frozen cut okra
  • 1 (10 ounce) package frozen baby lima beans
  • 1 (10 ounce) package frozen corn kernels
  • 4 medium potatoes, peeled and diced
Instructions:
  • In a Dutch oven over medium-high heat, melt butter until sizzling. Brown beef on all sides. Stir in diced tomatoes with green chilies and stewed tomatoes. Add okra, lima beans, and corn. Bring to a boil, then simmer over medium heat.
  • Simmer for 1 hour until meat is very tender. Add potatoes and simmer for an additional 30 minutes.
