Southwest Chicken Potato Salad

Whip up a zesty Southwest chicken and potato salad for a flavorful dinner delight!
Ingredients:
  • 3 pounds new potatoes (10 to 12 medium), cut into 3/4-inch cubes
  • 1/2 cup water
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 3 cups, 3/4-inch pieces cooked chicken or turkey
  • 1/4 cup canned chopped green chilies, drained
  • 1/4 cup sliced ripe olives, drained
  • 2 large tomatoes, seeded and chopped (2 cups)
  • 1 can (11 ounces) whole kernel corn with red and green peppers, drained
Instructions:
  • Place half of the potatoes and 1/4 cup of water in a 2-quart microwavable casserole dish. Cover and microwave on High for 10 to 12 minutes until the potatoes are tender, then drain. Repeat the process with the remaining potatoes and water.
  • Combine creamy mayonnaise, tangy sour cream, and zesty salsa in a spacious bowl. Carefully fold in the potatoes and all the other flavorful ingredients.
  • Chill in the refrigerator for a minimum of 2 hours.
