Southwestern Chicken Stir-Fry

Southwest-inspired veggie stir-fry with a kick!
Ingredients:
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 pound boneless skinless chicken breast halves, cut into 1/2-inch strips
  • 1 small zucchini
  • 1 small yellow summer squash
  • 2 tablespoons vegetable oil
  • 1/3 cup medium picante sauce
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Combine the zesty lime juice and spicy chili powder in a medium glass or plastic bowl, then add the chicken and mix well. Cover and chill in the refrigerator for 15 minutes. Slice the zucchini and yellow squash into thin rounds.
  • Heat a 12-inch skillet or wok over high heat and add 1 tablespoon of oil, swirling to coat the sides evenly.
  • Combine chicken with marinade and stir-fry until chicken is fully cooked. Remove chicken from skillet. Add remaining oil to coat the skillet. Stir-fry zucchini and yellow squash for about 4 minutes until crisp-tender. Return chicken to skillet and mix in picante sauce and cilantro. Cook until heated through.
