Spicy meatball poppers with zesty salsa dip - perfect for entertaining!
Ingredients:
  • 2 pounds ground turkey
  • 1 cup finely crushed tortilla chips
  • 1 egg
  • 2 cups Dannon Oikos Plain Greek Nonfat Yogurt
  • 0.5 cup chopped cilantro
  • 1 cup prepared (jar) picante sauce or salsa, divided
  • 1 cup frozen corn kernels, thawed
  • 1 cup black beans
  • 1 teaspoon cumin
  • 1 teaspoon ground chipotle chili powder, divided
Instructions:
  • Combine the yogurt, salsa, cumin, and chipotle chili powder in a bowl. Refrigerate 1 1/2 cups of this mixture.
  • Combine turkey, crushed chips, egg, seasoned yogurt, cilantro, corn, and black beans in a separate bowl. Use a small scoop to form tablespoon-sized balls and arrange them on a lightly greased baking sheet. Bake at 400°F for 20-25 minutes until golden brown.
  • Arrange the meatballs on a bed of shredded lettuce and provide the reserved sauce on the side for dipping.
