Quick and delicious bean and cheese bites, perfect for snacking or appetizers.
Ingredients:
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Cooking spray
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 8 medium green onions, sliced (1/2 cup)
  • 2 cups finely shredded Mexican cheese blend (8 oz)
  • 2/3 cup sour cream
Instructions:
  • Preheat the oven to 400°F with the rack in the lowest position. Lightly spray one side of each tortilla with cooking spray, then use a 2 1/2-inch round cutter to cut out 5 rounds from each tortilla. You can stack 2 tortillas together to make this process faster.
  • Place tortilla rounds on ungreased large cookie sheets with sprayed sides facing down. Spread beans on each round. Reserve 1 tablespoon of the onions. Sprinkle remaining onions and cheese over the rounds.
  • Place in the oven on the lowest rack for 11 to 13 minutes or until the crust is crisp and the cheese is melted and bubbly. Garnish each with approximately 1 teaspoon of sour cream and a portion of the reserved onions.
