Delicious Southwest pasta salad with rotini, corn, black beans, bell peppers, tomatoes, cilantro, and zesty lime-chili dressing.
Ingredients:
  • 0.5 (16 ounce) package rotini pasta
  • 0.33333334326744 cup vegetable oil
  • 0.25 cup fresh lime juice
  • 2 tablespoons chili powder, or to taste
  • 2 teaspoons ground cumin
  • 2 cloves garlic, crushed
  • 1.5 cups whole kernel corn
  • 1 (15 ounce) can black beans, drained and rinsed
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced red bell pepper
  • 0.5 cup fresh cilantro leaves
  • 1 cup chopped roma (plum) tomatoes
Instructions:
  • Boil a pot of salted water until it shimmers. Cook pasta until al dente, approximately 8-10 minutes, then drain.
  • In a large bowl, mix together oil, lime juice, chili powder, cumin, salt, and garlic. Add pasta and let it cool to room temperature, stirring occasionally.
  • Mix in the corn, beans, green pepper, red pepper, and half of the cilantro leaves. Transfer to a platter and top with tomatoes and the rest of the cilantro. Enjoy cold or at room temperature.
