Whip up a zesty Southwestern pasta using seasoned chicken strips, green chiles, and taco cheese for a bold and flavorful meal.
Ingredients:
  • 8 oz. (3 1/2 cups) uncooked bow tie pasta (farfalle)
  • 1 cup mayonnaise
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 (9-oz.) pkg. frozen southwestern-flavored cooked chicken breast strips, thawed, cut into bite-sized pieces
  • 2 medium tomatoes, chopped (1 cup)
  • 1 medium red bell pepper, chopped (1 cup)
  • 2 oz. (1/2 cup) shredded taco-flavored cheese blend
  • 3 medium green onions, sliced (about 1/4 cup)
Instructions:
  • Prepare pasta according to package instructions. Once cooked, drain and rinse with cold water to cool quickly and ensure excess water is fully removed.
  • In a large serving bowl, mix mayonnaise and green chiles until well combined. Stir in chicken, tomatoes, bell pepper, and cheese.
  • Combine the cooked pasta with the chicken mixture, gently tossing to coat. Serve right away or refrigerate until ready to serve. Finish off by sprinkling with fresh green onions.
