Spicy chicken and green bean stir-fry - a fast and flavorful dish!
Ingredients:
  • 2 tablespoons chili oil (such as Mongolian Fire oil), divided
  • 3 tablespoons soy sauce, divided
  • 0.25 teaspoon red pepper flakes
  • 0.25 teaspoon freshly ground white pepper
  • 2 pounds skinless, boneless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon mirin (Japanese sweet wine)
  • 0.5 teaspoon granulated garlic
  • salt to taste
  • 2 tablespoons cooking oil, divided
  • 0.5 cup sliced shallot
  • 1 pound fresh green beans, trimmed
  • 1 teaspoon chicken base
  • 0.5 cup water
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame seeds
Instructions:
  • Combine 1 tablespoon of chili oil, 2 tablespoons of soy sauce, red pepper flakes, and white pepper in a bowl. Toss in chicken pieces and coat with the flavorful marinade. Let it marinate while you prepare the rest of the dish.
  • Mix together the 1 tablespoon of chili oil with soy sauce, mirin, garlic, ginger, and salt in a small bowl to create a flavorful sauce; set it aside for later use.
  • In a large non-stick skillet or wok over medium-high heat, heat 1 tablespoon of cooking oil. Add the seasoned chicken pieces and sliced shallots to the hot oil. Cook, stirring often, until the chicken is cooked through and the liquid is reduced, around 8 minutes. Transfer to a bowl and keep warm.
  • In the same skillet, heat the rest of the cooking oil over medium-high heat. Add the green beans and cook, stirring often, until they turn bright green, around 1 minute. Then, add the sauce and mix well to coat the beans.
  • Add the cooked chicken and shallots back to the skillet and stir for approximately 3 minutes.
  • Combine chicken base and water in a small bowl, then whisk in cornstarch to create a slurry. Pour the slurry into the skillet, stirring briskly. Cook and stir until the sauce slightly thickens. Serve topped with sesame seeds.
