Indulge in savory noodles and succulent sweet chicken - a delicious treat!
Ingredients:
  • 80ml soy sauce
  • 45.00 gm brown sugar
  • 40.00 ml mirin (sweet Japanese rice wine - see note)
  • 40.00 ml rice vinegar
  • 4 x 150g skinless chicken thigh fillets
  • 250g soba noodles (see note)
  • 82.50 ml sliced pickled ginger (see note)
  • 2 tsp sesame oil
  • 3 spring onions, thinly sliced
Instructions:
  • Preheat a well-oiled chargrill or barbecue to medium-high. Combine soy sauce, sugar, mirin, and vinegar in a bowl, then add the chicken and coat it all over. Set aside the marinade. Grill the chicken on the barbecue or grill for approximately 4 minutes per side until it is cooked through.
  • Cook the noodles per the package instructions, then drain. Mix in the pickled ginger, sesame oil, and all of the spring onion except for 2 tablespoons.
  • Bring the marinade to a gentle boil in a small saucepan.
  • Simmer on medium heat for 2-3 minutes until the sauce thickens. Serve the noodles in bowls topped with thickly sliced chicken and the sauce.
  • Sprinkle with the remaining spring onion for a beautiful finishing touch.
