Soy rice pudding with banana & kiwifruit

Ingredients:
  • 4 litres vanilla soy milk
  • 220g rice
  • 1 cinnamon stick
  • 1 banana, peeled, sliced
  • Brown sugar, to sprinkle
  • 2 kiwi fruit, skin removed, sliced
Instructions:
  • In a saucepan, combine Vitasoy, rice, and cinnamon stick. Bring to a gentle boil, then simmer on low heat for 25 minutes, stirring occasionally, until creamy and tender.
  • Split into individual serving dishes. Layer with banana slices and a sprinkle of brown sugar. Top with sliced kiwi fruit.
