Delicious low-fat rice pudding with fresh figs.
Ingredients:
  • Reduced-fat dairy spread, melted, to grease
  • 240g (1 1/2 cups) cooked medium-grain rice
  • 4 fresh figs, cut lengthways into 5mm-thick slices
  • 32.00 gm brown sugar
  • 10.00 gm cornflour
  • 1.25 gm mixed spice
  • 185ml (3/4 cup) light soy milk or rice milk
Instructions:
  • Preheat your oven to 180°C. Grease four 11cm round tart dishes with melted dairy spread and place them on a baking tray.
  • Spoon the rice into the dishes and garnish with the sliced fig.
  • In a medium bowl, mix together sugar, cornflour, and spice. Slowly stir in soy or rice milk. Then, add the eggs and whisk until smooth. Divide the mixture equally among the dishes.
  • Bake in a hot oven for 22 minutes or until a knife inserted in the center comes out clean. Serve hot.
