Vegetarian pasta topped with crispy garlic breadcrumbs.
Ingredients:
  • 500g spaghetti
  • 75.08 gm olive oil
  • 2 garlic cloves, crushed
  • 375.00 ml fresh breadcrumbs
  • 125.00 ml chopped fresh basil leaves
  • 150.00 gm basil pesto
  • 1 tsp dried chilli flakes
  • Baby basil leaves, to serve
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until tender. Drain and return to pot.
  • In a large frying pan over medium-high heat, heat the oil. Add the garlic and cook, stirring, until fragrant. Then, add the breadcrumbs and continue to cook, stirring, for 2 to 3 minutes until golden. Remove from heat.
  • Combine half of the breadcrumb mixture, as well as the basil, pesto, and chili with the pasta. Season with salt and pepper, then mix everything together. To serve, sprinkle the remaining breadcrumb mixture on top of the pasta along with baby basil leaves and parmesan.
