Spaghetti with Ramps

Springtime ramp spaghetti ready in 20 minutes.
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 1 tablespoon olive oil
  • 0.5 bunch ramps - leaves washed, dried, and finely chopped
  • 1 tablespoon freshly grated Parmesan cheese, or to taste
Instructions:
  • In a large pot of salted boiling water, cook spaghetti until al dente, about 12 minutes. Drain well.
  • Heat olive oil in a skillet over low heat. Cook ramps until softened, 3 to 5 minutes. Mix in cooked spaghetti, season with salt and pepper, sprinkle with Parmesan cheese, and serve.
