Gourmet pasta with spicy Spanish sausage and squid.
Ingredients:
  • 2 chorizo sausages, roughly sliced
  • 1 red onion, roughly sliced
  • pinch of chilli flakes (optional)
  • 500ml tomato passata
  • 400g can chopped tomatoes
  • salt and cracked black pepper
  • 55g olive
  • 4.00 gm brown sugar
  • 1 tsp balsamic vinegar
  • 400g spaghetti
  • 2 squid hoods, cleaned, scored and cut into 5cm pieces (see note)
  • 40.00 ml fresh chopped flat-leaf parsley, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat a large non-stick pan over medium heat and coat with oil spray. Cook chorizo and onion for 3 minutes until onion is soft and golden. Add chilli flakes, passata, and tomato. Simmer for 15 minutes until thickened. Stir in olives, brown sugar, and balsamic vinegar. Season with salt and pepper.
  • Cook the spaghetti in a large saucepan of boiling salted water until al dente following the packet instructions.
  • Heat oil in a large, deep frying pan over medium-high heat. Cook squid in batches for 1 minute per side until lightly golden and cooked through. Transfer to a plate lined with paper towel.
  • After draining the pasta, evenly distribute it among serving bowls. Spoon the sauce over the pasta, place the squid on top, and sprinkle with parsley. Serve alongside crusty bread.
