Greek Spanakorizo: Vibrant dill, spinach, lemon, and feta rice pilaf, perfect with succulent lamb for a taste of the Mediterranean.
Ingredients:
2cups water
1cuplong-grain rice
1teaspoonolive oil
1 small onion, chopped
1bunchfresh spinach
1lemon, zested and juiced
0.25 cupcrumbledfeta cheese
0.25 cupchoppedfresh dill
salt and ground black pepper to taste
Instructions:
In a saucepan, bring water and rice to a boil. Then, reduce heat, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
In a saucepan over medium-high heat, saute onion until tender for about 5 minutes. Stir in cooked rice and spinach; cook until spinach wilts in 3 to 5 minutes. Mix in lemon juice, zest, feta cheese, and dill. Remove from heat and season with salt and pepper.
