Greek Spanakorizo: Vibrant dill, spinach, lemon, and feta rice pilaf, perfect with succulent lamb for a taste of the Mediterranean.
Ingredients:
  • 2 cups water
  • 1 cup long-grain rice
  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • 1 bunch fresh spinach
  • 1 lemon, zested and juiced
  • 0.25 cup crumbled feta cheese
  • 0.25 cup chopped fresh dill
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan, bring water and rice to a boil. Then, reduce heat, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • In a saucepan over medium-high heat, saute onion until tender for about 5 minutes. Stir in cooked rice and spinach; cook until spinach wilts in 3 to 5 minutes. Mix in lemon juice, zest, feta cheese, and dill. Remove from heat and season with salt and pepper.
